How to Prepare Filet Mignon, Sous-Vide Style
Sous-vide (pronounced sue veed) is a method of cooking that only sounds difficult. French for “under vacuum,” this preparation uses a warm water bath or steam to cook food in plastic bags or glass jars. Because it allows you to precisely control the temperature, sous-vide delivers consistent, delicious, and restaurant-quality results with very little effort.

How it’s done
To achieve the best results, start with a high-quality cut of steak, like our delicious, hand-cut filet mignon. These steaks are cut from the best tenderloin and aged for superior flavor and a buttery-smooth texture. Plus, each filet will come vacuum-sealed in its own plastic bag, so you can prepare as many as you want and easily save the rest for another meal. Defrost the steaks in the refrigerator and leave them in their bags.
When you’re ready to cook, submerge the bagged filets in a pot of room temperature water. Heat the water with a sous-vide wand, and cook until internal temperature reaches 130 degrees for medium-rare (around 2 hours).
Remove the filets from the water and their bags. Season them on all sides with coarse salt and pepper, then heat oil in a sauté pan. Once the oil is hot, pan sear on high heat for about 30 seconds on each side to finish them.
Let the meat rest for a few minutes before slicing. Then, voila! You have restaurant-quality filets right at home, no reservations required.
