Apple Cider & Bacon Jam Chicken

Serves 4

  • 3 tablespoons olive oil
  • 4 chicken breasts, skinless and boneless
  • 1/2 pound bacon, chopped
  • 1 cup fresh apple cider
  • 1/2 cup Hot Pepper Bacon Jam
  • 2 apples, cored and sliced
  • Salt and pepper, to taste
  1. Heat olive in sauté pan and season the chicken with salt and pepper.
  2. Over high heat, sear both sides of the chicken without cooking thoroughly. Remove from pan.
  3. Cook the bacon until crispy and remove from pan.
  4. Whisk together the cider, jam, and apple slices and let simmer for 5-8 minutes until apples soften. Sprinkle in the bacon and place the chicken in the sauce to finish cooking. Cook until chicken is 165F.
  5. Serve immediately over a seasonal puree like sweet potatoes.
